I think greater appreciation for kenyan food, authentic or not comes as a result of living in a foreign country.

Ndengu is mung beans and is readily available in indian stores. Together with all kinds of lentils like red lentilts, chick peas (flour used for bajias), etc

IMO parathas are nasty too much oil when you cook them, I prefer to make a batch of chapatis and freeze them, I just pop them in the microwave when I need it. You'd never know it was frozen.
